How to make it

    In a mixing bowl, combine tamarind paste, fish sauce, soy sauce, palm sugar, garlic, chili, and half the Thai basil. Stir until sugar dissolves.

    Add the sliced pork shoulder to the marinade, tossing to coat evenly. Let marinate at room temperature for 20 minutes.

    Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Remove pork from marinade, letting excess drip off, then sear in batches without crowding until deeply browned and caramelized, about 3 minutes per side. Set aside.

    Wipe the skillet clean, then add remaining oil. Arrange pineapple slices in the skillet, sprinkle with sea salt, and cook over medium heat until golden and caramelized on both sides, about 4 minutes per side.

    Return the pork to the skillet with pineapple just to warm through and meld flavors for 1-2 minutes. Remove from heat.

    Serve pork and caramelized pineapple garnished with remaining fresh Thai basil and lime wedges. Accompany with jasmine rice if desired.
