Method

How to make it

    Preheat the oven to 175°C (350°F). Line an 8x8-inch baking pan with parchment paper, allowing some overhang.

    In a bowl, combine the chopped dates, rolled oats, chopped walnuts, ground cardamom, smoked paprika, sea salt, and lemon zest. Toss to mix evenly.

    In a small saucepan over low heat, warm the tahini, honey, and water, stirring until smooth and pourable, about 2 minutes. Remove from heat.

    Pour the tahini-honey mixture over the dry ingredients and stir with a sturdy spatula until everything is evenly coated and sticky.

    Transfer the mixture to the prepared pan and press down firmly and evenly using the back of a spoon or clean hands.

    Bake for 12–15 minutes, until the edges are just beginning to turn golden and the mixture smells toasted.

    Remove from the oven and cool completely in the pan on a wire rack, about 30 minutes, to set before cutting into 8 bars.

    Wrap bars individually or store in an airtight container for up to 4 days at room temperature or 1 week refrigerated.
